Rocky Road





Ingredients
  • 50g milk chocolate
  • 50g dark chocolate
  • ¼ cup white and pink marshmallows
  • 50g packet lolly snakes – 4 lollies
  • 25g desiccated coconut


Directions
  1. 1 plain biscuit (digestives) or day old muffinCut the lolly snakes into small pieces.
  2. Cut marshmallows into small pieces.
  3. Mix together all ingredients except chocolate in a bowl.
  4. To melt the chocolate.                                                                              (a) Break milk and dark blocks into pieces and place together in a heatproof bowl  (glass is best). Place the bowl in a saucepan of hot water on the stove, gently warm  it until melted, stirring occasionally. Do not allow the water to boil.                            (b) (you could also do this in the microwave, stirring chocolate every 15-30  seconds until smooth).
  5. Pour the melted chocolate over the mixed dry ingredients and stir together with a wooden spoon or spatula. Pour the mixture into a 20 x 20 x 5 am square tin lined with baking paper, or into individual muffins papers. Refrigerate.
  6. Cut into squares and enjoy!
