Ingredients
- 250g spinach (fresh or frozen)
- 125gfresh ricotta cheese
- 1 tablespoonchopped garlic
- 2 tablespoonschopped shallots
- 1/4cup extra virgin olive oil
- ½ cup Tasty Cheese
- salt and pepper
- 1 package small wonton wrappers (could also use fresh lasagne sheets (Latina)

1.
Sauté spinach with garlic,
shallots and olive oil.
2.
Chop and drain all the liquid
from the spinach.
3.
In a bowl, place, spinach,
Ricotta, and tasty cheese.
4.
Mix well until you get a firm
texture.
5.
Add salt and pepper to taste.
6. Using
a pastry brush (or the back of a teaspoon), brush water onto the rim of a
filled and an unfilled wonton wrapper. Then press the two together, making a square
ravioli. Repeat the process.
7. Be
careful not to leave the ravioli in the air for too long or they will dry out.
Cover with a damp teatowel.
8. Put
the ravioli into the boiling water for 4-5 minutes or so, but check because it
can differ.
9. Serve
with Napolitana sauce, or just olive oil.
