olive oil
- 3 cloves garlic
- 400g canned
tomatoes, or passata
- 1 teasppon
caster sugar
- Salt and pepper
to taste
- 1 small chilli
pepper, finely cut (optional)
- Fresh basil

- In a pan, heat the olive oil and fry garlic. When the garlic starts to be golden, and it smells aromatic, (approx. 30 secs – 1 min) add the tomatoes and the sugar.
- The sugar is important because it takes away the sourness of the tomatoes.
- Season with salt and pepper and if you like, the chilli.
- Let the pan simmer slowly for 30 mins.
- Pour over cooked pasta and sprinkle with Parmesan cheese, (optional)
