Napolitana Sauce





Ingredients

  • 6 tablespoons olive oil
  • 3 cloves garlic
  • 400g canned tomatoes, or passata
  • 1 teasppon caster sugar
  • Salt and pepper to taste
  • 1 small chilli pepper, finely cut (optional)
  • Fresh basil leaves

Directions

  1. In a pan, heat the olive oil and fry garlic.  When the garlic starts to be golden, and it smells aromatic, (approx. 30 secs – 1 min) add the tomatoes and the sugar.
  2. The sugar is important because it takes away the sourness of the tomatoes. 
  3. Season with salt and pepper and if you like, the chilli.
  4. Let the pan simmer slowly for 30 mins.
  5. Pour over cooked pasta and sprinkle with Parmesan cheese, (optional)

·       Paring knife (if using fresh garlic)
·       Non stick skillet pan
