- 2 tomatoes, quartered, and diced into small pieces.
- 1 green shallot / or ¼ red onion.
- 2 teaspoons of fresh coriander.
- 1 tablespoon of lime juice ?lemon juice
- ½ teaspoon salt

- Cut up the tomatoes, shallots and
coriander.
- Place in one bowl.
- Add the lemon juice and salt.
- Cover and place in fridge for at least
half hour for the flavors to develop.
You
can also add fresh chilli if you like a bit of heat.
