Potato Mice


Ingredients

  • 4 medium baking potatoes
  • a little vegetable oil
  • 1 T butter
  • 1 T fresh grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 2 T milk
  • 1 T grated cheddar cheese
  • Cherry tomato
  • Shallot / chives/raisons/radish r carrot.

Preparation:10min  ›  Cook: 25min  ›

  1. Prick the potatoes with a fork, then bake in the oven for 90 mins or place in the microwave for 15 mins.
  2. When they are completely cooked, use a knife to cut off the top of the potato.
  3. Scoop out the flesh of the potato into a separate bowl, then add the parmesan cheese, mustard, 2 T milk and 1 T butter. Add a pinch of  salt and pepper.
  4. Mash the mixture together, then place the mixture back into the potato.  Top with the cheddar cheese, and place under the grill until the cheese is bubbling.
  5. When the potato is cool enough to handle, add the face add-ons.

           -cherry tomato half as a nose, by using a toothpick,
           -chives or a shallot as whiskers
           -a slice of radish cut in half as the ears. You can also use carrot slices.
