Ingredients
- 1 tablespoon oil
- 1 medium onion, diced
- 3 gloves garlic, crushed
- 5 medium chicken pieces
- 250ml coconut milk
- 2 medium potatoes, quartered
- 2.5cm piece fresh ginger, diced
- 1 green capsicum, diced
- 2 tablespoons curry powder, to taste
- 1 pinch salt and pepper, to taste
- fish sauce, optional
Directions

1.
Saute
onion and garlic in oil in a saucepan for about 2 minutes.

Add
chicken. Cook for about 5-10 minutes, turning chicken over occasionally to cook
evenly.
3.
Pour
in coconut milk. Add potatoes, ginger and green capsicum. Stir for 3 minutes.
4.
Mix
in the curry powder. Bring to the boil. Lower heat then simmer for about 5 minutes
more or until all ingredients are cooked.
5.
Add
salt and pepper to taste. The fish sauce can be added for more flavour. Serve.
